We’re releasing a new coffee this month! Since it’s our first production roast of this coffee, we admit: it may not be perfect. That’s why we’re selling bags from the first roast at a discount, and we’re keeping the details of the coffee a secret. Everyone loves surprises!
This month’s Mystery Coffee was grown by smallholding farmers and washed at a central processing facility focused on slower drying times than is typical for the origin. We’re targeting a roast right on the edge of City / City+ with this roast, with a dominant cup flavor of brown sugar and a subtle sparkling acidity that suggests summer plums or champagne. We found this coffee immensely drinkable – this is the kind of coffee where cup qualities are more important than the overall flavor (though the flavor is still quite lovely). We’re not brewed up many cups of this one yet, but we enjoyed our pourover immensely, and we suspect immersion brewing will be satisfying based on the sugary cup quality (we’re holding off on an espresso recommendation for the time being – we’re not sure how the acidity will present in shots and want to test it out first). The eventual retail price of this coffee will be $24.
