I first sampled this Sumatran coffee in June, and the moment I tried it, I hoped the supplier wouldn't run out of stock prior to September, as I thought it would make a perfect holiday offering. Wet-hulled coffees often have a rustic flavor, and this one is no different; however, the cleanliness and clarity of this coffee really stand out, with a pungent, herbaceous flavor that suggests cedar trees (freshly cut trees in pourovers and trees ground into sawdust – and I mean that in a good way – for immersion). While it brews well with any method, we think most people will enjoy the drinkability of immersion methods where an additional layer of sweetness balances out the cup flavors.
